Men Make Dinner! J-Si vs Al

J-Si's Mom's Enfrijoladas
 
 
1. Boil three to four chicken breasts (depending on how many you are serving). 
 
2. Pull the chicken apart to create shredded chicken. (or buy shredded chicken at the market).
 
now your chicken is ready. Set it aside. 
 
Note: you can also use eggs if you want this for breakfast.
 
 
 
Now to the Bean sauce:
 
1. easiest way is to buy 1 can of whole pinto beans, "La Costena" or something similar. My mom likes to cook the beans from scratch when she has time. (more beans=more servings)
 
2. add about 2 tbsp of tomato sauce
 
3. add some chopped cilantro and some pickled jalapenos (depending on how spicy you want it)
 
4. Put these in blender to make the sauce (blend until it is runny) 
 
5. add 2 tbsp of oil and heat the pan, 
 
6. pour the bean sauce into pan and let it heat at medium. Stir occasionally. 
 
7. Fry tortillas: oil has to be very hot, and remember not to leave tortillas too long or you will get tostadas. Just put it in, flip it and take it out and put it on a plate with a paper towel to absorb excess oil (should take about 3-5 seconds per side.  
 
8. take a tortilla and fill it with scrambled eggs, or chicken
 
9. Fold filled tortillas and pour the bean sauce on top.  Top off with sour cream, cheese (crumbled queso fresco), chorizo, and avocado (you can also use onions if you like them).

Runner Up 

The “Big Al-sagna”

1. First, pour yourself a big glass of red wine. Sterling Merlot is my favorite.
2. Next, you get a big boiling pot and boil a package of your favorite lasagna noodles. I like to let the water get a little hot before I put the noodles in.
3. Take a sip of wine.
4. While the noodles are working, go ahead and start on the sauce. I always get a couple of tomato sauces and mix them together but one of them is always Prego.
5. Slice some onions, jalapeños,  green peppers, red peppers, basically, anything that you would use to spice up a dish. Add in your favorite spices and peppers and mix all this into your sauce and mix well. I have even been known to add in a shot of my favorite tequila in the sauce as well. One shot…don’t over do it!
6. Then, I add in a can of spinach. Yes, spinach. Pour it into the sauce and stir and stir. And even heat it a little but I never bring the sauce to a boil.
7. Take another swallow or two of wine.
8. Ok, now its time to get your ground beef ready. Basically just throw it in the skillet and stir while its cooking. Add in some bacon crumbs if you want. Cook ground beef until its done as if you were making taco meat.
9. Pour more wine in your glass, its probably getting low by now.
10. Now get your cheeses ready. I use American, cheddar, Ricotta, and maybe another one or two.
11. Unless I have forgotten something, I think its time to put it all together. So, drink another sip or two of wine and grab your pan and layer the bottom with noodles. Then make a layer with ground up meat. Then make a layer of sauce on top of the meat. Then make another layer with cheeses.
12. Take another drink of your wine and repeat. Noodles, meat, cheese, wine.
13. Keep layering until you’re out of stuff. At this point you are ready to put in in the oven. Not the wine, the pan. Don’t forget to cover it with foil first. The pan, not the wine.
14. Bake in the oven for about 40 minutes at about 400 degrees.While this is baking, you may want to run and get more wine. This will be the best Lasagna ever!!! Good luck.
